越南甘蔗虾，经典越南开胃菜。把去了壳的鲜虾肉剁碎，打成虾胶后，裹在甘蔗枝上置于锅里油炸而成。外皮金黄酥脆，还粘着星星点点的面包糠，虾肉由于吸收了甘蔗的清甜，既香，又鲜、嫩、甜。吃的时候，要蘸着一碟辣椒梅子酱。
